Sharing one of the Yummiest yet Simplest Egg Toast Breakfasts; Bread Toast with Eggs, Pesto, & Mushrooms, topped with a hint of Spicy Chili Oil!!
Let’s check out the various options to customize this recipe per your choice:
- Veggies – Mushrooms and Spinach are my go-to additions for this recipe but you can opt for your favorite veggies.
- Pesto – You can use homemade pesto which is always the best, but for a quick fixup storebought pesto would work too.
- Chili oil – I usually prefer Trader Joe’s Crunchy Chili Onion Oil, but you can use homemade or any other brand of your choice.
- Egg – You can cook it according to your likeness; fried/scrambled/runny/poached/boiled, anything works like a charm, I prefer fried egg with a runny yolk!
- Open Toast or Sandwich – I love to serve this recipe as an open toast with one slice of bread but it’s a personal preference. You can use 2 slices of bread to make it as a sandwich which also works great.

Sharing one of the Yummiest yet Simplest Breakfast; Bread Toast with Eggs, Pesto, & Mushrooms, topped with a hint of Spicy Chili Oil!!
- 2 eggs
- 2 cups of mushroom
- 4 slices of bread
- Pesto (homemade / store bought, as required)
- Chili oil (as required)
- Oil / Butter (as required)
- Salt and pepper (as required)

Mushrooms: Wash, clean and pat dry the mushrooms, then thinly slice them. In a pan, add some oil and cook mushrooms with salt and pepper until they are cooked well.

Bread: Toast the bread in a toaster, or spread butter and toast on a pan on both sides.

Egg: Cook egg according to your likeness, I like fried egg with a runny yolk and topped with chili oil.

Serve: On to the toast, generously spread pesto. Top withmushrooms and fried egg. Enjoy right away!!!
